All About Freeze Drying

What is Freeze Drying?

Freeze drying, or lyophilization, is a three-step marvel that leaves food with that exciting crunchy texture and enhanced flavor.

  • Step 1: first, the food is frozen under atmospheric pressure.

  • Step 2: once the food is frozen, it undergoes the first drying process, called sublimation. During sublimation, frozen water is pulled from the food by changing directly from a solid to a gas! 

  • Step 3: lastly, the food undergoes a second drying process, which removes any remaining moisture and ensures your freeze-dried food stays freeze-dried. 

 

This method is not just about drying; it's a careful molecular dance that preserves the integrity and quality of what we eat.

Many traditional drying techniques use heat, which can dramatically decrease a food's nutritional value. But freeze-drying operates at low temperatures, preserving a food’s vital nutrients and antioxidants and maintaining the color, flavor, and structure of the original product. This means each bite is a true reflection of the food’s fresh state!

 

Impressive Shelf Life

Freeze drying removes moisture from any food, and moisture is the main culprit when food goes bad. No moisture = longer shelf life, so you can stock up on your favorites!
